Cheesecake Brownies

"It is always the simple that produces the marvelous.” –Amelia Barr

I’m not sure who Amelia Barr is, but she seems like a very wise woman. It really is the simplest things that turn into the best ones. For example, Cheesecake Brownies. They start from a simple boxed brownie mix, and then become a ridiculously delicious dessert. All you have to add is an effortless cream cheese mixture, and voila! From simple to marvelous in less than ten minutes.

This recipe is also perfect for today, as it’s National Cheesecake Day! However, if brownies aren’t your forte, try out this recipe instead. Whichever you prefer, seize this excuse to indulge in the tastiest, most classic dessert out there! Someone took the time to dedicate a whole day to cheesecake, so the least we can do is take the time to enjoy a slice.

Also, as a side note, I would like everyone to know that tomorrow is National Avocado Day, so I highly encourage all of you to check out my recipe for Perfect Guacamole! And of course, if you make anything using a recipe from my blog, please let me know how it turned out. :)

Cheesecake Brownies

Ingredients:

  • box brownie mix and ingredients called for on box
  • 8 oz. cream cheese (softened)
  • 1/3 cup sugar
  • 1 egg
  • 1/2 tsp. vanilla extract
  • 1/2 cup chocolate chips

Directions:

  1. Preheat oven to 350℉. Grease 13x9 baking pan with cooking spray.
  2. Prepare brownies according to directions on box. Pour brownies into prepared pan.
  3. In a medium sized bowl, mix cream cheese, sugar, egg, and vanilla with a handheld electric mixer on low speed until mixture is smooth and all ingredients are well incorporated.
  4. Pour cream cheese mixture over brownies. Then, use a butter knife to swirl brownies and cream cheese to create a marbled effect. Sprinkle chocolate chips on top.
  5. Bake for 28-34 minutes or until edges are firm and a toothpick comes out clean.
  6. Allow to cool before serving. Store in refrigerator in an airtight container. Enjoy!
