Blueberry Cream Cheese French Toast Bake
I am a firm believer that breakfast is the most important meal of the day; If it weren't for breakfast, I don't think I would ever get out of bed. And while usually Pop-Tarts are enough to keep me from turning over and falling back into a deep, dreamy slumber, the recipe featured in today's post is worthy of setting an alarm for.
Protein, carbs, dairy, and fruit are the essentials of every breakfast. This French toast bake combines all of these staples, plus syrup, which honestly no true breakfast is complete without. Even better, this recipe can be made the night before, so when you roll out of bed, groggy and indolent, all you have to do is pop it in the oven.
Another plus, this recipe is perfect for using up old bread and eggs. In my French toast bake I used up our leftover Hawaiian buns, end slices of wheat bread, half of a loaf of French bread, and the rest of our bag of white bread. Once it's all mixed together, you won't be able to tell what type of bread was used, how old it was, or even if it was stale-- just make sure it's not moldy.
My family is full of picky eaters, yet this is one of the few meals that everyone asks for seconds of. If you've been searching for a breakfast that your whole household will love, this is it.

Blueberry Cream Cheese French Toast Bake
Ingredients:
- 1 whole loaf of bakery French bread (or whatever bread you have on hand)
- 8 oz. cream cheese
- 2 cups blueberry pie filling
- 10 eggs
- 1/3 cup maple syrup
- 2 cups milk
- 1 tsp. vanilla extract
Directions:
- Preheat oven to 350℉. Grease 13x9 pan with cooking spray.
- Cube bread and dump into 13x9 pan. Cube cream cheese and sprinkle evenly over bread. Spoon blueberries over bread and cream cheese and spread evenly.
- In a large bowl, mix together eggs, syrup, milk, and vanilla. Slowly pour mixture over bake, patting the liquid into the bread as you pour.
- Cover pan with aluminum foil and refrigerate at least one hour, preferably over night, to allow the bread to absorb the liquids.
- Bake for 30 minutes covered, then remove the foil and continue baking for another 30 minutes. Serve warm with syrup, whipped cream, fresh blueberries, and/or powdered sugar for topping. Enjoy!
