Easy Chocolate Chip Banana Bread

Hey, everybody! It's been a while... My bad. I've been so busy lately that I haven't had any time to bake. Thankfully, I have some time off of school for the upcoming holidays, so I will be able to post more. I already have a long list of Christmas cookie recipes I plan to make, and I cannot wait to share them! But before I get too ahead of myself, let me introduce you to today's recipe.

Easy Chocolate Chip Banana Bread is one of my all-time favorite things to make. It's a very simple recipe, and my family always has the ingredients on hand, so whenever I'm short on time or my pantry is lacking, this is my go-to thing to bake. All you need is a box of cake mix, eggs, oil, bananas, chocolate, and like, ten minutes. Plus, its a great way to use up overripe bananas that would otherwise go to waste. Brown bananas usually aren't too appetizing, but in this recipe, they add a ton of moisture and flavor to the bread. Another awesome thing about this recipe is that it makes two loaves, so you can give one away and still have one for yourself, or if you keep them both, you can enjoy banana bread all week long! I would guess that I've made this at least fifteen times before, and I'm certain that I will make it at least fifteen times more. Easy Chocolate Chip Banana Bread

Ingredients:

  • 1 box cake mix (I used yellow, but feel free to play around with different flavors)
  • 1/3 cup oil (vegetable or canola)
  • 3 eggs
  • 3-4 medium-sized overripe bananas (mashed)
  • 1 1/2 cups chocolate chips

Directions:

  1. Preheat oven to 350℉. Generously spray two 8x4 inch loaf pans with cooking spray.
  2. In a large bowl, mix together cake mix, oil, eggs, and bananas with an electric mixer until all ingredients are incorporated and there are no large chunks of bananas left.
  3. Stir 1 cup of chocolate chips into batter and evenly distribute batter between pans. Then sprinkle an additional 1/4 cup chocolate chips on top of each loaf.
  4. Bake 45 to 55 minutes, or until a toothpick comes out clean. Cool 15 minutes in pans before removing loaves. Enjoy!
