Funfetti Cake Mix Cookies

Happy September folks! I am in complete and utter disbelief that it is already the ninth month of the year. I can only hope that my senior year flies by as quickly as 2018 has so far... As much as I enjoy learning, waking up before the sun just isn't my cup of tea, and I've already started a countdown to graduation. Only 173 days to go!

Thinking about how the end of my senior year is only a short ways away, I can't help but reminisce about the good ol' days. Of course I'm eager to move off to college and begin the next chapter of my life, but I'll never forget the excitement in the air whenever someone would bring in a birthday treat back in grade school. All the giddy children with their mouths full of frosting and big sugar cookies in each of their tiny hands-- that's exactly what today's recipe reminds me of.

The recipe I am sharing today will bring back all of your fond childhood memories. Funfetti Cake Mix Cookies call for only 3 ingredients, require zero chill time, and hardly take any time to bake, making them the perfect treats to make with kids. The brightly colored sprinkles also add a fun touch, but feel free to use any cake mix you desire. These cookies stay soft for days, and I think they even top the grocery store frosted sugar cookies that everyone raves about. Make these once and there's no way you'll be able to resist making them again!

Funfetti Cake Mix Cookies

Ingredients:

  • Pillsbury Funfetti Cake Mix (or cake mix of choice)
  • 2 eggs
  • 1/2 cup oil
  • Betty Crocker Rich & Creamy Frosting- Cherry (or any frosting, optional)

Directions

  1. Preheat oven to 350℉. Grease cookie sheet with cooking spray or line with parchment paper.
  2. In a large bowl, mix cake mix, eggs, and oil with spatula until all ingredients are incorporated.
  3. Spoon 1-2 inch scoops of cookie dough onto prepared cookie sheet. Use fingers to mold into ball-like shapes. Bake for 8-10 minutes or until a toothpick comes out clean.
  4. Allow cookies to cool for at least 30 minutes before frosting (if you chose to do so). Enjoy!
