Cookies & Cream Cool Whip Cookies
Can you believe that it's already August? I certainly cannot. Yesterday my siblings and I got our school supplies, but it still hasn't sunk in yet that in exactly one month we'll be back in school. I feel like there's still so much to do, there's no way summer could already be coming to an end; I haven't even gotten tan yet! I guess we'll just have to make the most of the little time we have left-- For example, by whipping up and enjoying some delicious Cookies and Cream Cool Whip Cookies!
I honestly think that it takes longer to say the name of these cookies than it takes to make them. They're probably the easiest cookies you'll ever make (besides those pre-made ones that you just have to plop on the pan). All that you need is a boxed cake mix, 8 ounces of Cool Whip, and one egg. You can use any kind of cake mix, any flavor of Cool Whip, and any add-ins you desire. It is such a versatile recipe, and it can truly be used to create any flavor of cookie you could possibly wish for.
For my cookies, I chose a yellow cake mix (although I think devil's food would have been better), Oreo Cool Whip Mix-Ins, and Hershey's Cookies 'n' Cream Premier White Chips and Chocolate Cookie Bits. Because the Oreo Cool Whip is a bit thicker than regular Cool Whip, I ended up needing to add a splash of water. You'll know it's the right consistency when your dough looks like wet cement, both texture and color wise if you opt for the yellow cake mix. Once they're baked, they should appear almost dry looking on the outside, but should have a soft, almost gooey center. They're not the prettiest things to look at, but as long as you can get over how closely they resemble cow pie, you won't be disappointed.
You can definitely expect to see more variations of this basic cookie on my blog in the near future. Let me know if you make this recipe for yourself, or comment what flavor of Cool Whip Cookies you would like to try.
