Ice Cream Sandwich Layer Cake

What could possibly be better on a hot summer day than a classic ice cream sandwich? A fudgey ice cream sandwich cake, of course! This cake puts a fun twist on the childhood favorite, and is a less putzy- but equally yummy- alternative to the traditional ice cream cake.

In this recipe, I tried out a new product, and now I don't ever want to go back. Cool Whip Mix-Ins just hit the shelves a few months ago, and currently comes in two flavors (that I know of): Oreo Cookie and Double Chocolate Brownie. I used the brownie Cool Whip (pictured below), which actually has little brownie chunks in it, in this recipe. I also currently have a container of the Oreo version in my fridge right now, so you can expect a recipe using that coming soon.

After making this cake a handful of time, I have discovered some helpful tips. Unless you want to work with drippy melting ice cream, keep one box of ice cream sandwiches in the freezer while you work on the first layer. Also, it is much easier to spread the fudge on the sandwiches if it is warm, but if you heat it too much, your ice cream layers will melt before you can get the cake in the freezer. I found that 12 seconds in the microwave (forgive me for the odd amount of time) works perfectly. Lastly, Ice Cream Sandwich Layer Cake is- as the title suggests- layered, so I recommend making it in a glass pan to show off the faux intricacy of this cake. I say "faux" because in reality, this recipe is super simple to make, but by the look of it you would never guess!

I think it goes without saying that this recipe does not require any baking. It's great for warm days like today, and will fulfill all of your chocolate cravings. Just be sure to get it right back in the freezer as soon as you're done cutting everyone a slice.

Ice Cream Sandwich Layer Cake

Ingredients:

  • 2 boxes of ice cream sandwiches
  • 1 jar of chocolate fudge
  • 1 container of Double Chocolate Brownie Cool Whip Mix-Ins

Directions:

  1. In a 13x9 glass pan, arrange one layer of ice cream sandwiches. You will have to cut some sandwiches to cover the entire pan.
  2. Microwave fudge for approximately 12 seconds. Pour fudge over sandwiches and spread evenly.
  3. Add another layer of ice cream sandwiches on top of fudge layer. Again, you will need to cut some sandwiches.
  4. Spread Cool Whip over the top of the cake and spread evenly. Freeze immediately until serving. Enjoy!
