Dill Pickle Pasta Salad
You thought I was joking when I said in my Best Chocolate Chip Cookies post that I was going to blog every single day this week? Well, maybe I was, but now we're on day 3 and still going strong. Since it would be bad for my figure to bake a sugary dessert every day, I figured that adding a few more savory recipes to my blog might be a good idea. Plus, not everyone has as big of a sweet tooth as I have, so I really should try to offer some variety.
Today's recipe is one that I just discovered recently, but have already made several times since. It makes a great, simple, and inexpensive side for a barbeque, a picnic, or really any sort of meal that you'd eat pickles with. Just a few weeks ago I made it for our weekly Sunday dinner with our grandparents. We served it with burgers, and everyone complimented how well it went.
I would also like to take a second to talk about the 2/3 cup of pickle juice in this pasta. If you're trying to watch your sodium intake, I'm sorry. However, it really does add a ton of flavor and honestly "makes" the dish, so while that much pickle juice might make some people cringe, don't skimp too much on it, or the pasta just won't taste the same.
On the other hand, if you're a pickle-lover, you will not be disappointed. You can definitely taste the pickle flavor in it, so this might just be your new favorite pasta salad...

Dill Pickle Pasta Salad:
Ingredients:
- 1 lb. mini farfalle noodles
- 1 cup dill pickles (sliced)
- 3/4 cup cheddar cheese (cubed or shredded)
- 4 tbsp. white onion (diced)
- 2/3 cup pickle juice
- 2/3 cup mayonnaise
- 1/3 cup sour cream
- 2 tbsp. dill
- 1/4 tsp. cayenne pepper
- salt and pepper to taste
Directions:
- Cook noodles as directed on box, then strain and dump in medium sized bowl.
- Cut pickles, cheese (if using block cheese), and onions. Add to bowl.
- Pour in pickle juice and stir. Add mayo, sour cream, dill, and cayenne pepper, then stir until all ingredients are incorporated. Add salt and pepper to taste if desired. Enjoy!
