Toffee Blondie Bars
Happy Fathers Day everyone! I would just like to start out by thanking my dad for cutting the grass in the 95 degree weather today, for staying up past 3 A.M. last night (this morning if we're being technical) to research colleges for me, for stirring my noodles so that my pasta wouldn't burn while I was trying to multitask this afternoon, and for all of the other wonderful things he has done for me these past 16 years.
So, how exactly am I showing my dad all of the appreciation I have for him on this special day? Well- lucky him- I let him choose the dessert! While he didn't have a specific request, he asked for something light and simple. So, after crossing a decadent chocolate lava cake off the list, I decided on some brown sugar toffee blondie bars. Although they might sound fancy, as long as you don't try to make your own toffee or something ambitious like that, they really are not, and I think that they fit my dad's criteria quite well. These bars taste super yummy, but they aren't too rich or overwhelmingly sweet. Plus, they're super easy to make, and they don't require much clean-up either.
Toffee Blondie Bars are the perfect dessert for any occasion, not just father's day. They're similar to cookie bars in the sense that they're simple and everyone will like them, but they're so much more gooey, tasty, and unexpected. Try them out for yourself and see!

Toffee Blondie Bars
Ingredients:
- 1/2 cup butter (room temperature)
- 1 cup granulated sugar
- 1/2 cup light brown sugar
- 1-1/2 tsp. vanilla extract
- 2 eggs
- pinch of salt
- pinch of nutmeg
- 1-1/2 cups all-purpose flour
- 1 tsp. baking powder
- 2 cups toffee pieces
Directions
- Preheat oven to 350℉. Spray 9x13 inch baking pan with baking spray.
- In a large bowl, mix butter with a mixer until pale in color. Add both sugars to the bowl and continue mixing until light and fluffy. Add vanilla extract and eggs, and mix until all ingredients are incorporated.
- Add salt, nutmeg, flour, and baking powder to the wet ingredients, mixing until just combined. Fold in toffee.
- Pour dough into prepared pan and spread evenly. Bake for 20-22 minutes, until the edges are stiff (center may still be jiggly).
- Enjoy!
