Cheater Strawberry Banana Muffins
The recipe I am sharing today is the "cheater" variation of strawberry banana muffins. Rather than going through the hassle of measuring out flour, sugar, and the other usual ingredients, these muffins call for a cake mix. It's the perfect recipe for when you're craving something sweet but not in the baking mood, when you're crunched for time, or when you're tired of your kitchen creations not turning out the way you had hoped (I'm talking about you, Strawberry Scones). Seriously, this is the kind of recipe that you would find in a cook book titled, "Baking for Dummies." They're truly the easiest way to make muffins without sacrificing taste.
Beyond using this batter for muffins, you can also bake it into bread, bars, or a cake (or just skip the eggs and eat it uncooked if you're into that). The original recipe by Betty Crocker is actually for plain ol' banana bread, so feel free to experiment with it and add your own mix-ins. Personally, I made a dozen muffins and one loaf of bread using my chocolate chip strawberry banana batter today (I'm indecisive, alright), and I think the berries added a lot of flavor.
While this might not be "real" baking, you certainly do not have to worry about the taste giving you away. These muffins are sure to please everyone... Just remember when people ask for your recipe to tell them that it's a secret.
Strawberry Banana Muffins
Ingredients:
- 1 box yellow cake mix
- 3-4 ripe bananas (mashed)
- 1/3 cup oil
- 3 eggs (beaten)
- 1/2 cup chocolate chips
- 1-1/4 cup strawberries (chopped in small pieces)
Directions:
- Preheat oven to 350℉. Spray two muffin tins with cooking spray.
- In a large bowl, mix cake mix, mashed bananas, oil, and beaten eggs until barely combined.
- Add in chocolate chips and strawberries. Stir until all ingredients are incorporated.
- Distribute batter evenly among muffins cups. Recipe should make approximately 24 muffins.
- Bake for 18-20 minutes or until toothpick comes out clean. Enjoy!
